We met Connor Baxter — @conbax — World SUP Champion, about a year back when he came into Mo’s restaurant, Seed + Salt. They connected about the power of plant based proteins for better performance and energy.

Mo: What inspired you to move to a plant focused lifestyle?
Connor: At the end of the day to be strong like Bull! But what does the Bull eat? It eats grass and I can get what I need from a plant based diet.
M: How do you feel it improved your performance?
C: I feel that I get a cleaner and steady energy flow. I don’t feel loaded or weighed down.
M: What do you look for in plant based products?
C: I want clean and easy to digest products without all the fillers and chemicals. Plus, the right nutrients and vitamins that you get from eating animal products.
M: What did you think of chocho?
C: It is an easy and clean plant that gives me energy and helps me recover quickly.
M: Could you share your recipe for how you used chocho?
C: I use after my workouts with coconut water as a protein shake.
M: What’s your advice for other plant based athletes?
C: It is hard at first but once you get through the tough part you will feel energized.
M: What’s your favorite way to share food with your friends?
C: Nowadays I love sharing my favorite products through social media and word of mouth.
M: What makes you happy about food?
C: I love that it brings people together and that it keeps me fueled for all my adventures.
M: What do you wonder about food these days?
C: Food nowadays can work against your body if you aren’t careful and sourcing it correctly. But at the same time, food is how our ancestor kept healthy and cured diseases – how can we get back to this idea?
