Unlike other legumes, chocho has negligible amounts of anti-nutrients making it easy to digest and free from the undesirable effects of typical bean consumption (think gas, bloating, and all those other things we don’t want to type out here).

The things you’ll need —
Chocho Hummus Instructions
- Combine all ingredients — except water, 10g extra virgin olive oil, and 4g minced parsley — in a high-speed blender (we love the Vitamix). Blend all ingredients in a blender on high speed until smooth, approximately 2 minutes. If the mixture is too thick, add 50g-100g of water to make blender operate more efficiently. The mixture should be the consistency of a very thick, delicious milkshake. Use the blender stick to ensure that no solid ingredients stick to the side of the blender walls. If your blender is too small, divide ingredients evenly and work in batches.
- Strain - Using a rubber spatula, scrape out hummus into a fine-mesh conical strainer or tamis.* If using a conical strainer: push hummus through a fine mesh strainer into a bowl using a medium-small ladle. Be sure to scrape the inside walls of the conical strainer with a rubber spatula to get as much hummus as possible.
- * If using a tamis: push hummus through tamis into a large bowl using a bench scraper. Be sure to scrape the inside walls of the tamis with a rubber spatula to get as much hummus as possible.
- Serve & Enjoy! Place hummus in serving vessel of your choice. Drizzle with 10g olive oil and sprinkle with minced parsley. Serve with fresh vegetables or your favorite bread and enjoy!
